It’s a tough job becoming a tour guide. It’s not just about memorizing all the details and getting to know the neighborhood; you gotta eat all the food, too. A harsh hazing ritual, as I’m sure you can imagine.
We recently got a new tour guide, which is always exciting. His name is Ted, and you’ll be meeting him in a tour guide interview in the beginning of 2013. Let’s welcome Ted and take a look behind the scenes at his trying task of enjoying a luxurious Italian meal at Palma with his new bosses, Amy and Todd.
Hi, Ted!
Being supremely Italian, Palma presents their zuppa de pesce traditionally: with a flatbread crust baked right over it. It’s an exciting way to have your food presented (note the steam in the second photo!), but the flavor is what will really blow you away. It’s a fisherman’s stew, baked under the flatbread crust, with mussels, clams, calamari, scallops, and shrimp in a light tomato broth. Delizioso!

Ted also got to try the polpettine (homemade meatballs with roasted tomato sauce and fresh basil) and the carciofi croccanti (crispy fried artichokes with parsley and parmigiano). Intrigued? Hear all about it — and taste some of it — on our Greenwich Village Tour!

All tour guides, new and old, go through this rigorous (and delicious) training and re-training process and therefore eat at the restaurants from our tours on a regular basis. Undoubtedly one of the perks of working for a food tour company is that you always have to know your food… and that means eating it!
